Almond Bread Biscotti
A traditional treat and perfect with coffee. This is a typical Italian ‘biscotti’ recipe which actually means it's baked twice. They remind me of comfort, family gatherings and I adore the aroma throughout my home when they’re baking. In this photo I had actually added a pistachio/almond nut mix which was delish. The only challenge is trying to slice them as thin as possible. Also, there’s no such thing as eating too many! INGREDIENTS: 4 egg whites, room temp 120g caster suga

Pasta alla Carbonara
A classic Italian tradition and iconic dish using spaghetti but spaghettoni, fettuccine, rigatoni and other larger short pasta types. An important rule is definitely no cream is added, the creaminess is from eggs, cheese and even a touch of pasta water. The only acceptable variation is either guanciale to pancetta and pecorino romano to parmigiano, or 50:50 cheese mix. Let’s create this epic dish. Serves approx. 4 people INGREDIENTS: 200g guanciale or pancetta: remove rind, d

Focaccine - mini focaccia (without yeast)
Focaccine...mini focaccia created without yeast and either baked in the oven or padella (pan). It’s a quick dough to create and bake and can be easy prepared before a meal. Some even add potato in the dough for another level of deliciousness. The best part is enjoying focaccine filled with mortadella, prosciutto, cheese or even baked topped with rosemary and cherry tomatoes. They're even perfect to accompany a lunch or dinner meal. Even topping with both salt and a touch of c

Focaccine Ripiene al Forno - Baked/filled mini focaccia
Focaccine...baked mini focaccia filled with melted, oozing provola cheese then topped with extra virgin olive oil, rosemary & salt which is a temptation you cannot resist. Ingredients: DOUGH: 500g Tipo 00 or plain/bread flour 2 tsp dried yeast 3 tbsp extra virgin olive oil 250-280 ml luke-warm water, as neede

Baked Zucchini Chips - Bastoncini di Zucchine al Forno
Fried or baked potato chips are my weakness and especially served with sour cream and chilli sauce. Serve them with my usual sour cream and chilli sauce, even mayonnaise or how I’ve pictured here with my feta, kalamata olive and oregano dip. You can use either butter or oil in the dough also. The result are gorgeous light, fluffy bread rolls
